These simple air fryer chicken nuggets are quick, crispy, and totally guilt-free! Made with canned or shredded rotisserie chicken, cheese, and egg, they’re low-carb, high-protein, and totally customizable with your favorite spices. No flour, no breadcrumbs—just satisfying nuggets in under 15 minutes. Add crushed pork rinds for extra crunch, and you’ve got a keto-friendly snack or meal everyone will love!
Ingredients:
- 2- 5oz cans of canned chicken (If you don’t like the taste of canned chicken like me, substitute 10 oz of shredded rotisserie chicken)
- 1 cup shredded cheese of your choice (I like to do ½ mozzarella and ½ parmesan cheese)
- 1 large egg
- Spices of your choice (I keep it simple with adobo seasoning)
- Olive oil cooking spray
Instructions:
- Mix all of your ingredients into a large mixing bowl.
- Form your chicken into equal size chicken nuggets. Make sure they’re flat so that they cook quickly.
- Preheat air fryer to 400°F
- Place nuggets in your air fryer, spray lightly with cooking oil and air fry for 10-12 minutes, stopping to turn them over halfway through.
Note: Want a little extra crunch or “breading”? Crunch up some plain or spicy pork skins and coat each chicken nugget before placing them in the air fryer.
